New Recipe

I typed this out for a fellow veggie friend from my other blog, and thought I would post here as well since my updates are so lacking. Its from the recent issue of VegetarianTimes, I changed a few things, but it's still not mine.




Picnic Caviar

(vegan) (yay!)
¼ c rice vinegar
¼ c vegetable oil
1 tbs sugar
2 cloves garlic
½ tsp dried oregano
½ tsp dried basil
1 can black beans rinsed and drained
1 can pinto beans rinsed and drained
1 ½ c fresh or frozen corn
1 red, yellow, or green pepper finely chopped
½ small red onion chopped
1 -2 ounce can of green chillies (ore a fresh jalapeƱo, Serrano, poblano, whatever you like or can find)
¼ c chopped cilantro
Whisk vinegar, oil, sugar, garlic, basil, and oregano together. Stir in rest of ingredients coating well. Refrig 1 hour before serving

Ok that’s the ‘official’ recipe.

I would use olive oil instead, and I would add edamame, and maybe add chives too
Oh and salt and pepper if you like that too. I do a lot of strength training and the add of edamame boosts the protein from 6 grams to almost 15 grams. It has 189 calories, and 7.5 grams of fat, but if you use olive oil its guilt free fat it has 7 grams of fibre too and that’s a huge plus to keep you full.
